I have Ehlers Danlos Syndrome and Celiac Disease. I have also dealt with symptoms of Lupus all my life, however I have never been diagnosed. I hope to find the motivation to start and stick to my wheat and gluten free diet that I am supposed to be on for Celiac.

I love raw corn too! For me that was a light bulb moment, I was like, "Huh, I never thought of not boiling the corn." I keep a bag of frozen organic corn in the freezer and often add it to salads. It keeps the salad cold and adds a yummy flavor and some interest.
Hi Lindsay - I saw your post on the Raw Foodies page and wanted to check out your spark page. I can't believe you do 30 day shred everyday! That's awesome. I have a ton of weight to lose and I'm pretty out of shape. I tried it once and could barely get through the jumping jacks!! Made great material for a blog though. I'm hoping once I lose some more weight that I can try and do it more consistently.
