Hey girl-- you're too funny!! Thanks for your comment on my blog (as always). :) I don't think you're a creep at all!! We all have those other people we admire and look to for motivation every day, so I am absolutely HONORED and flattered to be one of yours! (Seriously-- it's unbelievable to me MOST days how many wonderful people I encounter here who seem to find ME--of all people--their motivation. It's wild to me, since I'm just ordinary, and struggle like everyone else.) But thank you. You're a sweetie!
Just remember... your dinners don't need to be boring to still lose weight and reach your goals and stay healthy!! If you like tuna and lettuce, try jazzing it up by mixing in chickpeas (either cook ahead, or drain/rinse canned ones!), parmesan cheese, and salt/pepper. Then drizzle with 1 T. lemon juice mixed with 1 tsp. olive oil. This is a go-to lunch for me when there's not much else happening in my fridge for leftovers! It's tasty, filling, light, and really healthy!! Let me know if you try it... ;)
