Hey Hanah! Spark Coach lesson on Day 13 asks for Meal Plans for quick and easy meals, which was covered in the first paragraph of my blog! You have to remember that both my husband and I are retired at the moment and we both cook. Not so much work for just me. Years ago when I was going to college and I had a seven year old to deal with, my husband and I would do all the food prep on Saturdays. I'm not that well organized anymore. I prep when I have time and feel inclined to do so. I have more energy in the morning so I generally prep then. I hate having to do too much work at dinner time because by then I'm tired and hungry and I'm more apt to make poor food choices. If I haven't prepped and I'm really grouchy my husband will make dinner for me. I am going to hate it when he finally goes back to work!
I just love having onions and peppers already chopped. Last night's meal was chicken with pasta and veggies. I had to cook the pasta and sauté the veggies. It took 15 minutes to throw together. Easy. 1653 days ago
