No Fear

I am retired computer Systems Analyst and reasonably healthy thanks to my parents genes and enforced clean living as I'm allergic to cigarette smoke and alcohol. I've lived gluten free since 1981 when I found the cause of my ill health was gluten intolerance, multiple food sensitivities and chemical allergies. The test for Celiac Disease at that time was very invasive and the difference was so dramatic that my doctor said it was unnecessary. It was also thought to be rare (1:10,000).

In addition to my hobbies, I am the leader of my local support group and spend time advising new celiacs from the perspective of one who has been gluten free for 32 years.
When I look back, I've had numerous health challenges but I tend not to think about them. My second motto is No Reverse Gear. But it is good to know what you've had which for me includes 2 serious concussions by the age of 2 1/2 and another 2 years ago, undiagnosed Celiac from the time I was eating solid food, numerous falls down steep stairs (gluten ataxia), being rear ended 5 times, long term carbon monoxide poisoning (from the furnace in my home - long story), asbestos exposure due to zonolite in the house walls that had balloon construction and 5 sprained ankles as well as sciatica aggravated by more falls. And that's what I can remember. I recently had a series of cranial sacral treatments which I don't understand but were incredibly helpful with the effects of the last concussion. It's really helped with clarity of thinking and comprehension.
I love travelling, being on the open road or exploring remote regions of the world. Bonus, I lose weight when I travel, probably because I am so much more active and meal times and snacks are more controlled.
My home now is in the South Okanagan of BC where I have family roots from the 1920's - 50's.
To Celiacs & the Gluten Intolerant - check out the food pics in my photo gallery.
Check the list of symptoms from Recognizing Celiac Disease http://www.recognizingceliacdisease.

My Goals:
Lose 10 lbs, then set a new goal of another 10 lbs.
Declutter my house
Spend less time on the computer (which means less time on SparkPeople).
Find time for travel.
Find more time for weaving.

My Program:
Jan, 2013: Again I am restarting but I realize now that it is an attitude adjustment to come to grips with my sugar addiction. I am finding subsitutes for the 'crunch' snacks. Jicama with lime squeezed over it (or sprinkled with Ture Lime). Counting calories or tracking fats but being aware of my intake of each and portion control works better for me.

Keeping track on the Nutrition page is essential but I find it very time consuming for gluten free foods, alternative flours, home baking and cooking. I am posting less and concentrating on getting my life in order. I reset my weightloss ticker to reflect my current status although I still go up and down by 3 or 4 lbs.
I will use the exercise bike every day while watching the news.

Personal Information:
I feel like I lost 3 years while taking care of my mother long distance (who had dementia & was in her 90's) which meant everything was done for her first. The emotional toll left me with no energy so my life fell apart. After her death, it took me another 2 years how it had affected me and how long I had been burnt out. For the past 2 years I have been working on recovery and catching up on 15 years of burnout and the most recent concussion. I have compassion for anyone who is taking care of an elderly parent, spouse or sibling.
My most recent concussion was in Dec 2010 when I took a trip to Argentina & Chile including a cruise around Cape Horn. The second day out on the cruise, I fainted in the lobby (low blood sugar) falling straight back hitting my head hard on the marble floor. It wasn't until a month later when I was back home that I discovered I'd suffered a concussion. That was why I couldn't remember my Spanish and had so much trouble following a street map. Since I wa

Other Information:
I've lived gluten free, smoke free and alcohol free since 1981 when I found the cause of my ill health was gluten intolerance and other food and chemical sensitivities.
In 2000, I broke loose from being stuck in my life and changed my world upside down.
I continue on the journey of change and exploration.
I practice Reiki and meditate each day. I ahve suspended my Spanish studies while catching up on the 15 year backlog but really want to return to it.
At the time of this update, I am 6 and feeling the the strain of overseas independent travel. I am still having great adventures but need to take it slower and avoid 23 hr flights. I'm concentrating more on road trips. I plan to travel across Canada and the USA next year. I plan to return to my Spanish studies once I have caught up on the backlog and have my life in order. I have a lot of difficulty with languages but I keep trying. Give me numbers anytime. I like math!

Hi! Just a shout out to congratulate you!

You are the recipient of the Beautiful Woman Award!!

"Once you've been given this award, you have to paste it on the page of 8 women who deserve it. If you receive more than 3, you know you're really beautiful! If you break the chain, nothing will happen, but it's always good to know someone thinks you're beautiful inside and out!"

Again, Congratulations Beautiful!

Thanks for spreading a little beauty, love, friendship, and support into my life!

Hi B, checking in after quite some time. Back into the swing of things, getting back to more activity and better clean eating. Hope you are doing well. Blessings, Celeste

Hi....I'm back to GF cooking again....as Grandaughter is living part-time with me while going to school. Is there any substitute for phylo dough......we love the flaky texture it has....and often, the less calories.....

Also, I am having problems finding just our GF recipies that are posted.
