Here's another one: I just had dinner which consisted of 1) sautéed on med-low heat 1/4 cup grated carrots, half a thinly sliced red onion, and a med sized sliced zucchini with a pinch of salt and pepper. I then added some eggs and made me a veggie egg scramble.
And one last one: I get a lot of fruit in my CSA box that I don't always eat. So, I chop into small pieces and freeze. When I'm in a hurry in the AM, I pour in my blender: 1 cup of ff milk (or plain yogurt), 1 Tbs honey (more if I use yogurt), a dash of ground cinnamon, a Tbs peanut butter, and a handful or two of frozen fruit. It make a yummy smoothy with protein, fiber and calcium! :-) This works well with soy or rice milk too, if you're lactose intolerant. 2388 days ago
