UPDATE - April 2011:

Yes, gone for a while. Surgery in Dec 2010, married on the 24th and actually had some friends and family show up! LOL

On the road to recovering some sort of fitness level. My eating habits really fell down the drain pipe, exercise habits are non-existant, nutrition went so far out the window I think it is flowing rapidly down river with the spring rains!!! (This is the Pacific Northwest)

On with it...keep centered, grounded, balanced, ...

After being diagnosed with celiac disease in Nov '08, I find that my eat-as-you-go life style must drastically change AND that I have to do my own cooking. Something I honestly do not have time or energy for - cooking, eating, and exercising.

I have also been noticing my quality of life slipping, especially since this diagnosis. So, a little at a time, I will learn to feed myself well, strengthen my body, and make time for what really matters - living a good life.

****Update, February 2010 - Ugh

Not doing so well now. Either I picked up sympathy pregnancy weight from my daughter or became so overwhelmed by the defiant teenager in the house that I gave up taking care of myself. Now I have even more health problems and weight to lose than when I joined SparkPeople in the first place! OMG!

Now what? No idea really. Trying to get the bursitis, major reflux, muscle cramping, high level of chronic pain, and other unmentionables that will require some minor surgery to correct under control so I can have some dignity back.

Tomorrow is the "summit" meeting with the runaway teen (not mine) who wants "significant changes". Uh huh. Get a GED and get a job buster or get right back to where you been; you ain't runnin' this house pal and never will.

I gotta get my life back in order, holy tree of life batman. This is not cool. WTH happened????

****Update, October 2009 - Do-Over Phase

My utilization of fruit, vegetables, meat, and both from scratch and ready-mix gluten-free items for cooking is so awesome. I have also hammered down the challenge I was having with spices so that they are no longer a mystery to me when it comes to adjusting the taste of a meal. My guys (bf and his son) both scarf down what I put on the table and Matt started asking his friends to stay for supper. Now that's pretty awesome to me. My kids used to wait for the sound of the smoke detector to tell if dinner was being prepared as well as who was preparing it. :D

The quitting smoking thing isn't going as well as I would like, but I have cut down and I don't buy the darn things anymore. Mostly I stick to my goal of not smoking in the car and my new goal is to not smoke during the workday. Last week I had one cigarette per day Mon - Fri. My dbf says that's awesome, me, I think it's not so good.

Since I have been so achy and tired lately, I have not found a lot of time for real exercise. There are a lot of other things I do; regular daily chores, but that's about it. My dbf does help a LOT in that regard. If I said I was grateful for that it would be a gross understatement.

Gained back 7 pounds. That's pretty disgusting. Could be because I am eating better, not exercising except when doing chores, and really just plain exhausted most of the time.

*Update, Jun '09 - Phase III - I am now an awesome cook and I eat a lot better than I was when I started. My intake of High Fructose Corn Syrup is very close to zero and I don't drink coffee daily any longer. After seeing a very scary picture of my lungs, I am working hard to quit smoking so I can stick around and watch my grandkids grow up while I enjoy the spectacular new relationship I now have.

My new doctor is also removing my hormone replacement therapy because my bones are thinning rapidly and my body is doing other strange things. This has brought back all the migraines, muscle cramps, a few digestive issues, and several other problems that the hormones were keeping under control. But, I'd rather have stronger bones and let my body get itself under some semblance of control than continue to reduce my activity level to nothing.

In July, I will be going through more testing. This should provide a bigger picture of what is next for me on the rest of the path through middle age. :)

*Update, Feb '09 - Phase II - I am slowly finding time for cooking, eating, and exercising. It is a slow process, changing this many habits is not easy but I am determined to do so. I discover more things my body does not like to eat besides gluten: apples, tomatoes, peppers, additives, preservatives, and I am having more anaphylactic reactions to over-the-counter things like cold/flu and ibuprofen. It is an interesting journey to say the least!

My muscle tone is improving with exercise. Although I am not to the point of being able to take the stairs, I do take a flight now and then or walk up or down the escalator to the bus tunnel when I can instead of ride; sometimes I even take the regular stairs for one level. My knees let me know if it's ok or not!

The lower back is still not able to deal with much. This is a sad thing to me and what I wish to do the most about. Shopping becomes painful after 10-15 minutes, standing for more than that is nearly impossible. It must be done so I do it but it is bloody exhausting. I'm still looking for ways and methods to improve the strength and stamina of my back.

Protein and fiber seem to be my biggest challenge as is getting enough water. I have noticed that enough water reduces the number of migraines I get and other general improvements. I bought flax meal to start off March; plan to add this to my smoothies to add protein/fiber to my diet. We'll see how this works out and if my body freaks out.

I also have a new book - The Yeast Connection, by William G.Crook, M.D. - to read because I have trouble with yeasty foods and other symptoms that may be related. That will be my new commuter bus book soon for my round trip to Seattle every day.

Weighed just over 190 pounds mid-2001; worked off 70 pounds by riding a bike 11 miles one way to work and home again as well as using the bike for transportation. Gained back 35 by buying a car, hurting my back, and getting a desk job.

April 2009 I reached my 125 pound goal and in August was still there. I'm currently (Apr 2011) back up to 145 pounds. Knees and ankles are complaining and I'm back into my "fat" clothes! EEEEWWWW

Thanks for the kind words.

Honestly, I'm not an advocate for trying to make "lite" versions of the same stuff that got me fat to begin with. It creates an unfair standard of comparison. ... you're still stuck in the same mindset of foods that were problems before, IMHO.

It's the difference between more-better-different and making a completely different context for your food. It subtle and sounds like a semantic argument I realize, but it makes a difference.

So given that I wouldn't even try to do the "lite" lasagna.

Maybe instead take whole wheat lasagna noodles and try a Rachel Ray trick of using the noodles for a variation on a roulade. Single-serving rolled noodle dishes.

Maybe some roasted vegetables spiked with a herb/balsamic mixture (I've become a huge fan of black truffle vinegar pared with Creole Seasoning). And perhaps a roasted garlic-roasted red onion (or fennel) puree instead of a tomato sauce. Garnish with fresh herbs.

You can keep the sauce and roulades separate for easy freezing, though I personally have trouble with leftovers, as they encourage me to overeat. So I don't opt for the make-ahead method and opt for configuring my pantry to be able to make single-serving meals quickly. Two approaches for the same thing.

Bear in mind roasted garlic and roasted red onion or fennel can be very sweet, so balance it with some heat and earthy herbs and vegetables to pull it together. Using an artichoke puree could work too, maybe. Just depends on what you like.

*Laughs* You asked me about kamikaze cooking last month (I've been slow on my online posting lately) ... and I'm laughing because that's pretty much hte only cooking Kevin and I do.

It's actually a huge challenge coming up with structured recipes because we really want to empower folks to have the chutzpah to do some daring kamikaze cooking.

Last night as a black bean-corn-sweet potato chowder with our mole spice rub. Usually I use rubs in the more conventional sense -- why not as a base for soup? I fold in 1 egg/2 egg whites for more body and protein. Amazing.

Check out Youtube vids for ideas on WTH to do with it if you want more ideas. I have a new respect for people who do this *pant pant*. I admire your perseverance through low vit D and likely low sunshine quotient. When I lived in AK, tons of people in January'd go to Hawaii -- I never had the moola, but I sure understand why!

Thanks for the high praise mary. Work and working out is my life. I am a member of two guyms and try to work out 6 days a week. Take at least three spin classes etc. I had 345 gym days last year
