My Goals:
My goal is to make some small but meaningful and permanent changes to my life in order to be healthier. Weight loss and increased strength and stamina will follow.

My Program:
First and foremost, I am tracking everything and it helps tremendously! By reading my own reports, I can see many misconceptions I've had about my diet. I am striving to achieve at least the minimum levels on calories, carbs, proteins, and fibre. As well, I am committed to move more, but baby steps -- because I have some health issues that limit that, and I really want the changes to become HABIT, and hence permanent.

I hate to have to tell you this Katy, but my mandolin had one of those little gizmos too, and I was using it. But the potato got stuck so well that when I pushed it extra hard everything gave way in a rush. There was no way to ease up, it was instantaneous. I had trouble with almost all of the slices, and this was literally the last slice I needed to do. Probably why it gave way, not enough potato to hang on to. Live and learn, I hope you enjoyed the life lesson with out having to experience it yourself. As Elmer Fudd would say "Be vewey, vewey carefoe!" Thanks for reading my blog. emoticon

My favorite roasted veggies are probably brussel sprouts and cauliflower (though I've never cooked these together).

Recently I cooked brussel sprouts 2 ways (did NOT like them with the balsamic vinaigrette). The brussel sprouts with parsnips was good, but the hubs is the one who really likes parsnips.

I haven't had many roasted vegetables that I didn't like. I do seem to enjoy them more when they're finished with a little water or broth to steam at the end of the cooking.

Hi Katy,
Thanks for stopping by to read my "Food avoidance" blog.

I like your way of thinking about the "expense" of what you're eating. That really goes along with the mindful eating philosophy.

I've spent the last week experimenting with recipes for roasted veggies. I've found some good tricks and I've been enjoying those wonderful flavors (although I did find some "never again" recipes).
