I love my carbs too much to give them up. I'd tried eating low carb twice in the past 4 years and it's just not for me. I end up binging on sweets and gaining the weight back. Because I know this now, I just stick to calorie counting. I will pick slightly better snacks for me that have the better carbs such as a packet of oatmeal versus crackers. Or sometimes I will skip a carb as a snack altogether and just have a cheese stick or nuts.
