that muffin recipe sounds fantastic....thanks.
Actually I've been so scared of eating anything even remotely 'processed' that the only starchy carbs I've been eating are old fashioned oatmeal and my beans. But that recipe sounds like it would make a great healthy treat. ... the WHEAT BELLY book has me totally paranoid

I noticed that you are a "Wheat Belly" fan. If you liked this book, I think you will find "The Paleo Diet" by Loren Cordain very interesting and informative! Get the 2011 revised edition that has been updated to include recent advances in nutrition science. This is an amazing book, and I refer to it often!
