The thing about being vegan is making sure meals are nutritionally balanced - which can be a challenge! For this recipe, which I've actually made a couple of times since, I have replaced the chicken with setan or tofu (squeeze the tofu and then marinate in a spice rub and briefly bake it). I also added additional veggies. Often, I'll use beans for things like this - for a recipe like this, butter beans are good - and serve it over brown rice or whole barley.
