    The thing about being vegan is making sure meals are nutritionally balanced - which can be a challenge! For this recipe, which I've actually made a couple of times since, I have replaced the chicken with setan or tofu (squeeze the tofu and then marinate in a spice rub and briefly bake it). I also added additional veggies. Often, I'll use beans for things like this - for a recipe like this, butter beans are good - and serve it over brown rice or whole barley.

    Hi! I saw your review of the recipe Thai Chicken Coconut by Chef Meg inJan. You mentioned you were vegan and had adapted it. My teen daughter is vegan....other than taking out the chicken, I'm curious how you made the recipe. It sounds so yummy to me!
