    I just read your comment about the "improved" meal plans - I've also been turned off from them because of their "yuppieness," lol - I'm young and southern and don't even know what "haute gras" means, though I get the point.
    My answer is no, you don't have to eat like that to get healthy. I've gone from 192 to 140 (only the last 10 with Sparkpeople) just by editing a few cooking techniques. I eat less butter on my veggies (which I eat a lot of), I cook my chicken (breast, usually) in foil with a limited amount of butter/margarine and plenty of garlic salt, lemon pepper, etc. I eat less of everything, but I still eat bread and pasta and rice - I just make it about 1/4 of my plate now, not 1/2! :)
    I have found casseroles to be difficult. They're like a treat now - a splurge dinner for a light day. I put them into Spark Recepies (under the Healthy Lifestyle tab) and plan my day around them :)
