Well, here's the thing: I don't cook. :D My husband does. And, if you look, you'll see that every day's dinner becomes the next day's lunch. We make 10 servings of everything every night, big batches, so that all five of us have dinner and lunch the next day. As for breakfast, we've been making those in 3-day batches, though starting tomorrow I'll be making a few days of egg scrambles and those I'll make on the spot. Snacks don't involve any cooking. And, to be fair, none of the meals I've been making are terribly out of the ordinary for my household. I just double the number of veggies that I take and don't take whatever other side dish (corn, rice, beans, pasta, etc) that the rest of the family is eating. Other than some extensive planning before each grocery trip - and we already planned meals beforehand, so it's not THAT much more - it's really not terribly different. Surprisingly easy to adjust to.
