Hey Cortney! I agree cheese is a great protein option. I just think of the mountains of it I used to eat. Now I use it as a condiment instead of a main course. :)

Eight days to go! I am seriously excited. I could not sleep when I made my first appointment 3 months ago. It is even worse now. And you were right, I am coping with the fluid diet, even though I did not think I would.

Thanks for stopping by my post about going meatless. The protein issue is what I worry about most. I actually had gastric bypass four years ago and protein is considered the most necessary nutrient to get afterwards. That's why I think I will eventually get to the point of just eating chicken at times. I do love legumes but fibrous protein sources are also higher in calories (albeit good ones). I am also just getting over anemia so I have to be careful.
