Hiya COOSEN, I wanted to follow up on your post and say that understanding the glycemic effects of food on your body is extremely important. It wasn't until I read Dr. Atkins book did I understand what my doctor had been telling for years about how carbohydrates effects the pancreas. For example...My evening meals would consist of as much meat as I wanted, probably a cup and half of mash potatoes, 1/2 cup of corn, 1/2 cup of carrots, 3 to 4 dinner rolls and desert. And my sugar would hit in the high 300s I couldn't understand why because I wasn't eating anything different than I had in years. Well after reading Dr. Atkins book and the Glycemic Index book I realized I was destroying myself with high carb combinations. I still have mash potatoes, but 1/4 cup, I don't eat carrots or corn when I have potatoes and visa versa. I have dinner rolls only when I'm not eating high carb foods, and my desert is soooooo small but delicious! Feel free to ask me anything. What I can't answer for you I'll try to find the answer.
