I have heard people use spaghetti squash in place of pasta - I tried it once and wasn't impressed. I have done mashed cauliflower mixed with potatoes, but never had good luck doing the cauliflower alone, but I've heard others rave about it so it must be good if you do it right.
Congratulations to you on all of the things you have "given up" recently - I know those aren't easy!
