Hi. You read my blog and asked about meatless Mon. & falafel. I just have a meatless dish on Mondays - beans, rice, pasta, tofu, whatever. We usually eat fish of some sort on Fri. and do chicken, beef, pork the rest of the week. My daughter has been a vegetarian for 4 years now (she is almost 18) and it was something I did to accomodate her and I figured it wouldn't hurt the rest of us. Falafel is Greek and it is a mix made of dried, crushed chick peas (garbanzo beans) and spices. You get the mix in a box and just add water. I shape it into large meatballs, press it flat and panfry in a little oil. They get crunchy on the outside. I serve with a yogurt/cucumber sauce, pita, lettuce and tomato.
