I'm finally making some progress....

I love it. I came here to edit my page but after taking a gander, it is all still very much relevant except the 10 year old is now 12! I guess I am making progress. It helps that I have found a wonderful small company to work for where physical fitness is daily banter. Everyone walks, runs, does Insanity.....It's helped me get motivated. I can say I'm a happy camper!

I've been at this a while and it's definitely a journey. Like most people I work hard and the weight comes off. Then I slip, get totally derailed, and it all comes right back plus a few lbs. Well I'm happy to say I've been making some gradual changes that I feel like are really becoming lifestyle changes. Here are a few changes and accomplishments over the past 6 months.

1. I'm eating more fruits and veggies. I had to do it in stages though. When I decided to make a change last April, I basically was only eating a veggie with dinner. I went from basically no fresh food to eating it out of cans, then frozen, and now I'm migrating to the mostly fresh category. I'll definitely be planting a garden this year because I've also learned how to freeze them so they don't go to waste.

2. I eat at home 98% of the time. Not only have I saved a ton of cash $$, but I've eliminated a lot of the boxed processed foods and in the process I've lost the bloat inches. I guess all of those words on the ingredient lists that I can't pronounce might have something to do with that.

3. I've learned to cook...and I like it. Now I'm not going all Martha Stewart but I can cook a recipe I find on Spark Recipes, or the plethora of other websites out there and tweak it to my preference. I've eliminated salt from every recipe I make. I've learned how to make my own seasoning packets so there are no more McCormicks packets, no more Hamburger Helper, no more Stove Top Stuffing, no more freeze dried potato packets or Knorr noodles, no canned chili or canned soups. This has really helped to eliminate those danged starchy carbs at dinner time too that were always a staple. About the only thing out of a box we eat is whole wheat pasta now. I've found the slow cooker to be one of the greatest inventions on the planet. I got this down. And again, I've saved a fortune. I spend under $350 in groceries each month for my household.

4. We use the plate method as much as possible, especially with dinner. I always give them a choice of what fruit they want with dinner which helps.

5. I like to juice. I haven't made one yet I had to hold my nose to get down.

6. The kicker-the others want to eat this way now. Again, it was and is a process. In the past few weeks, the 10 year knows he will be eating the green stuff on his plate. None of them have said they really missed the box crap. They are disappointed when there are no leftovers to take for their lunch. The older kids now pack celery and carrots in their lunches, and are eating yogurt with their breakfast.

7. I feel better. I mean actually less toxic. Better. Not as moody. Generally happy. Who knew, all it takes is time.
