    My quick healthy dinners consist of a modge podge of stuff. I don't like to cook-there's a lot of clean up involved and I'm not very good at it.

    Most days for dinner I have an assortment of things. It's generally the last meal of the day for me so I have a lot of little bowls filled with all kinds of stuff. Hummus, pita chips, fruit, veggies...this is my time to get in what I may have missed during the day.

    I plan on making 3 meals a week and my crock pot is my best friend. I make enough servings that I can take it as lunch or have enough left over myself and my son for at least one day.

    Friday is my treat day. I get to eat what I want but I've learned to not engorge myself. It's the day I weigh myself and feel like "I was good all week so I'm going to have that bowl of ice cream or go pick up some take out." I get one treat and Saturday it's back to the daily haul :)

    I have my days laid out by the hour-but that's because I have so much going on most days that if I don't I forget to get dinner going or I forget that it's early pick up day for my kiddo.

    YOU are one super-organized, planner extraordinaire! Thank you for sharing some of your tips with me. I appreciate it. I'm going to attempt to give Saturdays a shot at being my prep-day for creating the single-sized servings of all the snacks, etc.

    Do you have any tips to share about how to make healthy dinners in a short amount of time? (Thanks, in advance, for your help and suggestions.)

    I appreciate your support. Thanks for your suggestion to make a healthy pizza. I'm going to try and keep the ingredients on hand at home; so when the pizza craving hits me (because let's face it, it will), I can at least eat a healthier version.

    Thanks for the blog comment, I will definitely have to pick your brain later on, for any tips, tricks or ideas I might come across later. I am not getting a planner we're doing it on our own, so it'll be nice to have a professionals point of view! Hope all is well and the kiddo is feeling better!
