I am eating about 9 servings of fruits/vegetables every day, mostly vegetables. I am getting close to my goal weight!

I am eating about 9 servings of fruits/vegetables every day, mostly vegetables. On the weekend I cook a combination of mushrooms, onions, lentils and quinoa to take to work with me for lunch every day. I also bring a 10 oz box of frozen veggies to cook, plus raw carrots and wholly guacamole snack packs, a piece of fruit, and some walnuts. My breakfast is a big salad with kale, watercress, spring mix, broccoli and chopped craisins. In the evenings it's more cooked veggies and maybe some berries. Very few animal products, and I try to limit those to mostly fish, usually only when I dine out.

My exercise plan is walking (at least 2 miles every day) and commuting to work on the bike every day weather permitting, for as long as the season allows. I use a stationary bike in the winter, and when I get to my goal weight I'm going to reward myself with an elliptical. I know I should do some strength training and some stretching; those areas are lacking.

So for the Spring Into Summer 5% challenge, I am a Firecracker. My goal is to reach my goal weight by the end of the challenge. I will check in with the team daily to offer and receive support.

My Goals:
My goal is to get back to 130 pounds, maintain my cardiovascular fitness, build strength, and increase my flexibility.

My Program:
Keep a journal of my food.
Walk about 2 miles a day.
Use the stationary bike for 30 min 5 days per week or commute on the bike to/from work. Also ride the bike on the weekends.
Strength training 3x per week.
Stretching 10 minutes a day.

Thank you so much for the goodie and the support. I got a little off track with the long 4th of July weekend and gained last week, but I am back to tracking and being more accountable. It has been so long since I saw 130 pounds that I sometime doubt that I will get down to my goal of 135, but seeing you and other reach your goals helps to keep me focused and shows that it can be done. I hope you enjoy a lot of bike riding this summer. emoticon
