    Hi Anggel-
    Sorry it's taken me so long to answer your quesiton about soy pancakes!
    I buy Hodgson Mill Soy Flour, which I think I bought at my regualar supermarket, but it might have been Whole Foods or somewhere fancy like that, I don't remember.

    The recipe I followed is:

    Soy pancakes (chocolate) (makes 4-5 or 8 small):
    Ingredients
    1 1/4 cup milk
    2 large eggs
    3 T oil
    1/2 t vinegar
    1 cup soy flour
    3T sugar
    1 1/2 T cocoa powder
    1/8 t baking soda
    1/4 tsp salt
    (1/4 c chopped pecans, 1/4 t vanilla, dash cinnamon optional)
    Instructions:
    Combine milk, vinegar, beaten eggs and oil in a mixing bowl.
    Add in soy flour, sugar, cocoa powder, baking soda and salt. Mix until just smooth.
    Rest the batter for 5 minutes.
    Preheat a non-stick pan over medium heat.Reduce heat to medium low, then pour about 1/4 cup of batter into the (lightly greased) pan and spread out. Cook until lightly brown on one side (3-4 min), then turn over and cook for another 2-3 minutes, or until done.
    Serve warm.
    They are very high protein. I suppose you could make them without the sugar or cocoa, but it adds a nice light flavor, and I don't bother with syrup. They're also good with 1/2 c blueberries added at the end before stirring.
