Hello, my name is Amber. :)

I try and concentrate on my strengths, my blessings, and all the good things in my life. It's worth it!

I was diagnosed with gluten intolerance on 10/08/10 (my fourth wedding anniversary!) which totally changed the way I eat and look at food. I'm feeling better and finding out the random other foods that just don't sit well with me. It's frustrating. Food allergies are readily accepted, but food intolerances are pushed to the side. Because so many people claim an "intolerance" when they are really just following a diet trend.

If I could eat gluten, I would. Gluten-free products try their best, but nothing beats the real thing. I'm still working on discovering the various things that trigger digestive pain for me.

Whatever your journey, whatever your path, I wish you success. Losing weight/getting healthy isn't easy, but it's worth it.

My goal is simply to be healthier. Losing the weight is a big motivator to treat my body better.

My husband, Aubrey, and I like taking walks together.

We were going to quit the gym for the summer, but I was missing it terribly. There are just too many excuses for me without it. "It's too hot to work out" "I'm tired" etc. But once I'm at the gym; I'm there. All excuses must fade away because I'm paying for it darn it! I have to get my money's worth! Luckily another gym was running a deal so now we're back at the gym and it's not costing as much as before.

    Congratulations on your weight loss. You look great. I also have a food allergy to shellfish. I developed it late in life. I found it difficult to believe you can go 40 years eating something and then find out it makes you deathly ill. I do miss shrimp, lobster and oysters. I feel very fortunate that I don't have an allergy to gluten. Good luck! emoticon

    I can completely understand the gluten free diet - my husband was diagnosed with celiac disease four years ago and I discovered two years ago that I am intolerant to it (my psoriasis completely went away after over 15 years of suffering with it on my ankles). I agree that many of the ready made products leave a lot to be desired, therefore I make most everything we eat. Breads are the most difficult to give up but Glutino makes a good English muffin alternative you can find in the freezer section and I use a Gluten Free & More magazine pizza dough recipe to shape into bread sticks or buns as well as making pizza. We really like it.
