Paleo DOES require far more prep work that I like. I try to do at least half of it despite Jason being the cook in our house, because he's already cooking something else for the kids. I try to make batch breakfasts and always make two servings at night so I have lunch automatically the next day. I've found it's easier to just cut up a bunch of veggies, toss in oil and seasoning, and roast for 20-30 mins, then stick half of them in the toaster oven to warm up the next day. That does still involve all the cutting of veggies though, and yes, it takes a lot of prep. No doubt.
