Keeping Fit and Healthy

I'm here on Spark to continue and enrich my healthy lifestyle. I don't need to be the fittest or the thinnest, but I do want to be healthy! My main goals are to eat well (fruits and veggies, fiber, and less dessert) and exercise regularly. I'm 5'8" and have a healthy BMI. I have to eat gluten free because I have celiac disease.

I love the gym -- I never thought I'd say that! I take classes, but I'm also trying to incorporate more strength training through the Girls Gone Strong ...

I made a few adjustments...

I added more jalapeno and hot sauce (sriracha). I like things spicy. I forgot to add in cilantro. I did not fry them in the skillet. I sprayed a skillet with olive oil spray and cooked for a few minutes on each side. Then, I transferred the patties to the oven for a few minutes of baking. The thicker the patty, the more they stayed together.

All in all, they tasted great. I topped them with extra sriracha, a homemade guacamole, and a touch of sour cream. They were a bit crumbly and not as moist as I would have liked -- that could have been due to the extra cooking, though. Next time, I think I would just bake them.

I would definitely make them again. I ate them in whole wheat pita bread, on their own, and on a salad. They were very, very easy.

I didn't see the comment you made on my blog post last week until today -- so sorry for my lack of response, especially considering how kind & thoughtful your comments were!

I've thought quite a bit about seeing a dietician. I struggle between wanting to do this all on my own and knowing that I should seek out help, as it could only benefit me to have the help of an expert -- they are an expert for a reason!

I thought of you this weekend -- specifically with the fact that you are gluten free. I tried two gluten free products, a chicken enchilada evol bowl (found at Target) and some jalapeno jack crackers (found at Aldi's). Both were quite good!

Thanks for the comment on my blog. Striking that balance is what we're striving for presently. He's making a real effort to cook with me in mind, choosing better ingredients and asking me to make sides, etc. We've come a long way! I appreciate your suggestion!

I tried my new Veggetti at lunch today and I'm sold! I used a zucchini with some marinara. LOVE IT!
