My name is Debbie and I am a fundraiser who has been unemployed for exactly 1 year as of May 1. I have used this time well, growing closer in my walk of faith, volunteered with several organizations, quit smoking (since March 18th), starting walking every day, made new friends, and learned to have a loving heart again. I love to garden, enjoy good food and wine, and read. I want to work for at least 6-7 more years and then spend 50% of my time traveling around this beautiful world and 50% ...

Have recently introduced MUFA to my daily diet. Eating all the foods that are good for me and that I enjoy, lots of veggies and some fruits, mostly fish and chicken. Walking every day and doing some weight exercises.

I'm sorry I'm just now getting back to you. Thank you for reading and commenting on my blog. A check-in on occasion would be nice, just to keep up the accountability portion. If not via Spark, then via personal email is fine, if you're okay with that. I moved, so I'm not currently in San Diego anymore. I can't tell you how sad that makes me. I'd appreciate a look at my resume. I'll have to figure out what else I've done that probably should go on it, but is sadly absent from it and send it along, too.

Yes, I chop the raw beet up into small pieces and just add it to the salad . . . seemd weird at first but I've really come to like it.

Today I roasted two shallow pans of veggies (including 8 beets, a small golden cauliflower, carrots, celery and red pepper) and then whirred them through the food processor in batches with a can of tomatoes, a can of white kidney beans (rinsed and drained), some veggie broth and a large carton of fat free Greek yogourt . . . a borschty kinda thing for "soup o' the week"!

About a year ago I read a study with pictures showing skin tones for those who eat a lot of bright fruits and veggies vs those who tan. Really obvious: the veggie eaters have glowing natural rosy warmth, the tanners look kinda ashen-skinned! So I'm just saving money on makeup, right?
