Personal Information:
I live in Simi Valley, CA with my hubby of 14yrs and and our three fur babies Sadie (female - Corgi mix), Joie (male - Springer Spaniel mix) and Dawson (male - Golden Retriever).

Other Information:
I am looking to get healthy again (I used to be very healthy once upon a time) and am thinking about becoming a vegatarian again. Haven't decided yet because hubby isn't crazy about the idea.

About making brown rice (non-sticky), this is how I do it.
I put one tablespoon of coconut oil(coconut oil has been given a bad rap in the past, but new finds---it melts at below body heat, so it can't clog your arteries---get unrefined at health food or Walgreen has it too.) in a large skillet. Heat the oil on medium add one cup of long grain brown rice, cook and stir it about five minutes, add 2 1/2 cups of water. Bring to a boil and turn it down; when it settles to a nice simmer...cover and check after 30 minutes, at which time you will add one teaspoon of salt, stir and check again every ten minutes until it is to your liking. Don't ever add salt to any kind of rice until it is done, or almost done cooking (I learned that on a tv cooking show-something about the grains re-action? This advice goes for cooking dried beans too.). Now taste it, it is really... really good by its self. To me it has no coconut taste. I measure it into small bags and press them flat to freeze... so covenant to grab a bag and mix with cooked frozen mixed vegetables.
[Put the frozen rice into a little water (about a tablespoon), cook and hydrate the rice in a small skillet, before adding, whatever to it.]
And it is so health too with a nice salad. Maybe add some curry power or what ever to everything ? Plus, top it off with an orange for desert! Now we can feel really... really health after that meal!!! Please let me know how you fair with this...I am determined you don't miss out on this healthy dish!!!
