I just discovered kale chips, which are an amazing way to fool your body when you are craving something salty/crunchy. Here's a link to a video that explains how to make them: http://www.youtube.com/watch?v=QGesrS_YrQc You can do the same sort of thing to make beet chips.

This is a wonderful time of year for apples, so a snack I often enjoy is an apple sliced up into many slices and a tablespoon of peanut butter. I create a moment of it, and I use a small cheese knife to spread a slice with a little peanut butter, and then eat it. Then I repeat with the next slice. It makes me eat more slowly and appreciatively. The mix of sweetness, creaminess and crunchiness satisfies me.

I am a nighttime snacker. I try not to eat too heavy or too late, but am often in a quandry as to what to have for a snack before bedtime. I sleep much better when I have a small, healthy snack. My "go to" when all else fails in popcorn, but I would like suggestions for tonight especially since my calories etc; are limited based on the following:
