1 large Mango (peeled, pitted and cubed) 1/4 cup orange juice 1/2 teaspoon grated orange zest 2 tablespoons lime juice 2 tablespoons cider vinegar 1 tablespoon honey (or more to taste) 1 teaspoon grated fresh ginger salt and pepper to taste
Place the mango, orange juice and zest, lime juice, vinegar, honey, and ginger in a blender or small food processor. Purée until the mixture is smooth. Season to taste with salt and pepper, and add more honey if your mangos aren't sweet. Refrigerate up to 2 days.
