For the filling, IN TOTAL FOR THE RECIPE, the calorie information (roughly) is as follows:

Calories: 717
Fat: 34
Carbs: 120
Protein: 11

The bulk of the protein and carbs come from the walnuts, cranberries, and croutons. You can play with those ingredients to meet your own goals.

Apples go deliciously well with pork so I like to make an Apple & Cranberry Stuffed Loin.

1 boneless pork loin (about 3 pounds)
Sea salt and freshly ground pepper
1 cup seasoned croutons
1/2 cup chicken stock
1 cup peeled, chopped green apples
1/3 cup dried cranberries
1/3 cup chopped walnuts, toasted
1/4 cup minced shallots
1/4 cup finely diced onion
3-4 cloves finely diced garlic
1 Tbsp pure maple syrup (or honey)
1 Tbsp minced rosemary

1. Add stock to croutons until absorbed.
2. Filet and pound tenderloin until thin.
3. Mix all remaining ingredients with croutons, and spread evenly onto pork.
4. Roll and tie with string.
5. Coat the bottom of a roasting pan with cooking spray or a little olive oil. Place the roast in the pan and cook at 325F, uncovered, for about 1 hour ten minutes, or until the pork reaches an internal temperature of 140-145F. Start checking the internal temperature of the roast at about one hour. Let stand for 10 minutes. Remove the kitchen string and slice into 1/2-inch thick slices.

SPINACH STUFFED PORK TENDERLOIN

1/2 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
2 tablespoons butter
1 small onion diced
2 cloves garlic chopped
1 heaping tablespoon dijon mustard
1/3 cup fat free bread crumbs
3 pounds pork tenderloin
4 tablespoons ketchup
1/2 cup orange juice
4 tablespoons teriyaki sauce
1/2 teaspoon ground cumin

Set your oven to 350 degrees

Saute spinach, butter, onions and garlic over medium heat until soft. Add bread crumbs.

Cut tenderloin in half lengthwise. Stuff with spinach mixture and tie to close with kitchen twine.

In a bowl, mix ketchup, orange juice, mustard and teriyaki sauce. Baste tenderloin with 1/2 of the mixture. Sprinkle pork with cumin.

Place in shallow baking dish and bake at 350 degrees uncovered for one hour

Baste with the rest of the marinade and cook 30 minutes more covered tightly with foil..

just sounds so good, don't know what to stuff it with,that is low cal & low fat
