thanks for posting- I was actually looking for an acorn squash recipe since they're in season right now. this sound delicious!

Tastes like a dessert.
So good you won't eat it any other way.


1 large acorn squash
1 teaspoon ground cinnamon
1/2 cup crushed pineapple, drained
brown sugar or maple syrup - your choice

Preheat the oven to 350 degrees

Cut the squash in half, and remove the seeds and any stringy membranes

Place cut side up in a baking dish. Cover the dish and bake for 45 minutes.

Combine the cinnamon and pineapple,

When squash has been cooked, remove from oven. Let cool down for 10 minutes.

Scoop out the pulp from both halves and combine with the pineapple and cinnamon . Then stuff the mixture back inside the cut squash

Place a pat of butter on top and then sprinkle some brown sugar on top or a drizzle of maple syrup.

Place back to the oven and bake for about 7 minutes until it is hot and bubbly.
