I make vegetable soup with left over roast beef, using the left over gravy too I cut the roast up, boil potatoes, carrots, cabbage,celery and onion together til almost done, then toss in a bag of mixed veggies. I thin out the gravy with the veggie water, add tomato juice , add the meat to the veggies and pour the liquid back over it.. This is a very healthy soup, as you can add/subtract any veggie and there is little fat as I skim it off my roast juices before making gravy. I also add very little salt.

Its that time of the year at my house and everyone is getting sick. I would like to make yummy soups that might actually put something other than fat and salt in our systems.. Help?
