Interesting, thanks! I like soba noodles quite a lot. I haven't yet tried somen noodles, but I think I'll head over to the international foods store this weekend and get a package to try.

IMO, I swap out noodles all the the time in my cooking since my closest grocery store has a limited Asian section, and I don't always feel like driving the extra distance to the closest Asian supermarket. Sure, it might have a slightly different texture and flavor, but dishes usually taste just fine no matter which noodle you use. I'm no purist. :P

Is there a huge difference between these? One is a wheat flour noodle, the other a buckwheat flour noodle.

I really have no idea how they might differ, other than that. I'm still a total amateur when it comes to Asian cooking. Any thoughts?
