if it's something highly caloric i weigh it out. i give the spoon to my so :P but otherwise i use a butter knife to portion out- then i can just scrape the extra back in.

Just weigh it, it's faster and more accurate. I weigh the spoon, knife, whatever I'm using to extract the food from the container, then tare my scale then scoop the food and weigh.

Have a little kitchen scale handy. Calibrate it with a square of wax paper (keep the squares a certain same size and you're pretty safe using that wax paper every time you measure) - that is, get the scale to point to zero with the empty wax paper on it. Then, look at the weight (instead of TBSP or tsp or whatever) of whatever serving size you will be using. It's always listed for the serving size when nutritional information is on the product. It's also one way you can look up foods in a database (look for the grams, for example).
Then just put what you think is the right amount on a square and weigh it. Start low and add to it until you get the right weight. Then take the wax paper with the correct weight food off the scale and scrape your hummus into your pita or onto your cracker.
It just makes it easier for me to use the squares of paper that I know are 0 on the scale. You can also put a plate on the scale and zero the scale to the plate. Then put the food on. But when you keep changing the vessel (plate, paper, cup, glass), you have to keep recalibrating. Sometimes you just have to recalibrate anyway and you should always do spot-checks, but most stuff you measure is dry and quickly measured.
I have the same problem with peanut butter....I measured it out the right way for awhile-and once I got an idea of what 2 tbsp really looked like, I ditched the measuring spoon...I know that might not sound good-but who wants to precisly measure their food out the rest of their lives?

ok, so I like hummus and baba ganoush. 1 serving is 2 tablespoons. but if I scoop up the hummus or baba in a tablespoon, there's no good way to get it OFF the tablespoon without sticking my finger in it! suggestions?
