I make something very similar but add cherub tomatoes, onion and sometimes Portobello mushrooms. I even throw mine on stoneware & cook it on the grill. Yum!

Zucchini, 1 cup, sliced Parmesan Cheese, grated, 1 tbsp I Can't Believe It's Not Butter, Original Buttery Spray, 10 sprays Non-stick cooking spray
Directions Line a cookie sheet with aluminum foil, then coat with some non-stick cooking spray. Place the zucchini slices out on the pan, then spritz with them with the butter spray. Sprinkle on the parmesan cheese and then pop it in the oven. Broil for a few minutes - until the cheese starts to brown. Enjoy it while it's warm!
I found this one on the recipe area. It just says broil though for a few minutes

I am looking for a recipe that was featured yesterday for zuccini parmesan (or something like that). No eggs were involved, it was just zuccini, grated parm and butter spray. I just don't know how long or what temp to use for cooking this recipe. Can anyone direct me to it?
