Try a simple slow-cooker Soup:
Peel the mystery squash and Chop in hunks. Toss in a 5-6 qt crockpot with granulated or minced garlic, sliced onions, sliced celery, chunked potatoes, any chicken stock or broth you have on hand (or just use cover the veggies with water, add herbs and salt and pepper)... cook on low overnight. Season with more salt/pepper to taste the next day... keep on warm until you want to eat it. YUM.

My squash I used wasn't that big so 2 tablespoons of olive oil was a bit too much, so unless your squash is pretty big you could use less oil.

I've never cooked a butternut squash before. The only way I know how to cook squash is the way my mom did it, bake it with butter and brown sugar, which I'm trying to avoid. Thank you for the suggestions. I just happen to have some chipotle peppers I didn't know what to do with; I'll try that. :)

Yeah I think you're right....and could probably just prepare it as you normally would. Maybe cut it open and see what it looks like on the inside, and even have a little taste of the raw to see if it still tastes similar to butternut?

You could also puree/mash it sort of like mashed potatoes. I add chipotle peppers to my mashed sweet potatoes so I don't see why you couldn't do that here to make it more interesting. My other ideas for squash (adding it to risotto or mac and cheese, making as filling for raviolis) aren't really on the healthier side.

If you look at this picture of the Delicata or Sweet Potato Squash, it's exactly that shape, but instead of having pale orange stripes it has pale green stripes.

I think maybe that's what it is. It has those colorings, just a little more squat.

I don't know what kind of squash it is without a photo (does it have a stem?), but I would prepare it like butternut squash.... the other night I just cut one up and tossed it with some olive oil and paprika and pepper, and roasted it. You could add some balsamic vinegar too.

My other thought is it might be a spaghetti squash? Those are similar looking to butternut, but are just one big oval shape vs having the narrower top part like butternut.

Someone gave me a squash from his garden. It looks kind of like a butternut squash, except it isn't narrow on one end, it's kind of rectangular. I know squash is healthy, but the only way I know how to cook squash is to bake it and eat it with butter. Does anyone have any other ideas? It's about a 4 pound squash, feels very dense.
