I suggest a high quality electric kettle. You can boil water much more quickly, then transfer it to the hot plate. I found mine at goodwill. If there is a goodwill by you, you could also try getting a convection oven.
Is your turkey roaster a rotisserie style or one that you can actually put a pan in? I use my small toaster oven for all kinds of things - roasted vegetables, casseroles, baked chicken, quiche, etc. They're really perfect for cooking for two. If you have the budget to go out and get one ($50ish) it might really open up your options.

If I were you I would capitalize on that crock pot. Do you have a decent sized fridge/freezer? Do you have a microwave? Prep everything in the morning before heading to the gym. Put it in the crock pot and put the basin in the fridge. Depending on how long it takes to cook, start the crock pot right when you leave for work. Turn it off when you get home, let it cool for a bit and package it up in tupperware, or baggies for individuals meals that you can heat up in the microwave. If you don't have a micro, consider getting a vacu sealer, so you can heat up the meals in a boiling pot of water. There are 10 quadrillion crockpot recipes out there, so I'm sure you could find good options.
