omlette packed with meat cheese and veggies (or cream cheese and lox little fresh dill)


boiled eggs with a slice of cheese

peanut butter with a half of apple

I have to admit that steel cut oats and eggs are my breakfast staples, but I also like to make a smoothie when I am short on time. I like to use plain greek yogurt (good protein), splash of vanilla almond milk, frozen fruit (berries are packed full of antioxidants), and a couple tablespoons of toasted wheat germ. You can add so many things to a breakfast smoothie to make it super healthy and delicious. I have even heard of adding fresh spinach - although I haven't tried that yet! Hope you find something that you enjoy!

Try a no carb , crustless quiche !! You don't have to eat traditional Breakfast foods at Breakfast !! I am sure you can change this up a bit and add ham or sausage to the mix.


SPINACH QUICHE

1 tablespoon vegetable oil
1 onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
5 eggs, beaten
3 cups shredded Muenster cheese - or whatever kind of cheese you like
1/4 teaspoon salt
1/8 teaspoon ground black pepper

Preheat oven to 350 degrees

Spray a 9 inch pie pan with Pam.

Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.

In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend.

Scoop into pie pan.

Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving. Slice it up like a pie .

Hi all. For some reason, I find that when I eat, especially when I eat -anything- with white bread, I get so tired I can hardly think. This is a real problem when I have to get up and go to work, because so many breakfasts consist of carb heavy food (toast, pancakes, waffles, etc). I have a slight gluten insensitivity (I can eat whole grain but not multigrain breads). I also can't eat a lot of milk, so a lot of cold cereals are out. I would really like some recipes for breakfasts besides just eggs, eggs, eggs, or oatmeal. I know this really narrows down what I can eat, but any recipes you have lying around that fill those requirements would -really- be appreciated! emoticon
