Pork is fairly inexpensive right now. Just take a pork loin roast and roast it in the oven or grill with a spice rub. Pork is just as versatile as chicken breast, but a little less expensive. To cut the fat stick to the loin pieces (white).
For carbs, look at Quinoa or Couscous. When you cook, just boil in chicken stock and add some seasoning, tumaric or lemon juice.
