no leftovers for us yet (having big meal when my parents come to visit next week) But I do like getting a big bird so lots of left overs.
The carcass is boiled down and made into soup. I usually freeze a good portion of the meat (learned for experience that it goes bad before we eat it all) The dark meat I save for sandwiches. most of the white meat is made into a turkey salad (similar to tuna salad).

I made turkey soup this morning. It will probably last thorough the weekend.
Turkey Tetrazini (make over version). Shepherd's Pie. Sweet potato ravioli. Stuffed shells made with the creamed spinach. Turkey soup from the carcass. Stuffing will be served with poached eggs. Corn pudding will be served with shrimp sauteed with shallots and a splash of wine (low country style shrimp and grits). I will have small servings of all of it. the other 4 members of the house will finish it all off.

i had a thanksgiving party and made two turkeys thinking I would need that much We ate one turkey but never touched the second one. SO we called a local soup kitchen and explained it to them. They were happy to take it off our hands. I wondered really because It was already cooked, they dont know if it was prepared safely, but they happily said yes.

sandwiches... and I am going to make a turkey noodle soup (celery, carrots, low fat broth, spices, turkey, whole wheat pasta noodles.... ) I may make a turkey salad (a version of chickensalad without the mayo.... and a vingerette in place)
