I would probably not use coconut milk in an alfredo recipe, although I'm not hugely familiar with coconut milk. I'd worry it might throw the taste off.
If you have a freezer, the beans can be frozen (not in the can, though, put them in another container).
If you freeze the milk, it will become watery & separate, although I've just shaken it back together with acceptable results. You can also use up the evaporated milk by mixing it with water and using it as you would regular milk (pouring over cereal, etc).

Tonight I am cooking pasta alfredo with broccoli found in the spark solution book. It says I need to use half a cup on beans and 3/4 cup of evaporated milk. Is there anyway I can store them until I need them again? I read a post about coconut milk and am wondering if it will work here too? Please help
