1 cup Splenda brown sugar - for baking 1/4 cup Splenda white sugar - for baking 1/2 cup light butter 2 eggs or Eggbeaters 1 tablespoon all-purpose flour 1 tablespoon skim milk 1 teaspoon vanilla extract 1 cup chopped pecans
Low fat/low cal unbaked pie crust .
Preheat oven to 350 degrees
In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well.
Last add the milk, vanilla and nuts.
Pour into an unbaked 9-in pie shell.
Bake in preheated oven for 10 minutes at 350 degrees, Then reduce temperature to 300 degrees and bake for 30 to 40 minutes, or until done

Use a mix of Greek yogurt, hazelnut cream cheese, and pumpkin pie spice for the icing. Top with toasted pecans. Makes one serving.

I take a can of Libby's pure pumpkin and blend it with cream cheese... a smidgen of butter and a tad of powdered sugar and a cap full of vanilla extract. Once blended I fill Phyllo shells with the mix...Viola...mini pumpkin pies.
