Light Pecan Pie

1 cup Splenda brown sugar - for baking
1/4 cup Splenda white sugar - for baking
1/2 cup light butter
2 eggs or Eggbeaters
1 tablespoon all-purpose flour
1 tablespoon skim milk
1 teaspoon vanilla extract
1 cup chopped pecans

Low fat/low cal unbaked pie crust

Preheat oven to 350 degrees

In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well.

Last add the milk, vanilla and nuts.

Pour into an unbaked 9-in pie shell.

Bake in preheated oven for 10 minutes at 350 degrees,
Then reduce temperature to 300 degrees and bake for 30 to 40 minutes, or until done

2-Minute Pumpkin Pie
If you need a little something to satisfy your sweet tooth, whip up this 75-calorie pumpkin pie for one. This simple recipe, pared down to the most basic and common ingredients, only takes 2 minutes to make, but the end result tastes as delicious as traditional, calorie-packed pie.

1/2 c. pumpkin puree
1/4 c. egg whites (from an egg or carton)
Cinnamon or pumpkin pie spice

Mix together all the ingredients. If you prefer a flan-like texture, add more pumpkin; if you prefer a cake-like texture, add more egg whites. Microwave for two minutes. Use a mix of Greek yogurt, hazelnut cream cheese, and pumpkin pie spice for the icing. Top with toasted pecans.
Makes one serving.

I take a can of Libby's pure pumpkin and blend it with cream cheese... a smidgen of butter and a tad of powdered sugar and a cap full of vanilla extract. Once blended I fill Phyllo shells with the pumpkin pies.

You may also want to try...

15 baked miniature phyllo tart shells (one 2.1-ounce box)
1 6 - 8 ounce carton Fage 0% plain Yogurt
2/3 cup fresh blueberries, raspberries, and/or cut-up strawberries
Fill phyllo tart shells with yogurt. Top with blueberries, raspberries, and/or cut-up strawberries. Serve at once or cover and chill up to 3 hours before serving. Makes 15 miniature tarts.

Phyllo Shells fill with cocktail sauce and top with a shrimp...easy and good low calorie...make it pretty ...garnish with a sprig of parsley.

Help the holidays r coming i love pecan pies and pumpkin pies does anyone have recipies for these so i can stay on track
