I imagine you are talking about the new nutrition standards that are taking place next year where school are going to be required to offer more veggies and fruit and less sodium laden foods. They also have set calorie and fat limits which is where I imagine the french fry issue comes in and they are replacing the fried ones with baked or roasted ones. It's not perfect but it's a start. I ate school lunch nearly everyday of my school life growing up and it was full of hot dogs, hamburgers, greasy pizza, canned vegetables (of which I never touched), meaty discs that I think were salisbury steak or something equally gross (IMO) and my personal favorite mashed potatoes with butter and gravy.
