no cook goats cheese pizza - serves 4-6 - 384 calories per portion
1 round focaccia loaf or long ciabatta 200g tub marinated grilled red and yellow peppers in olive oil 3 tbsp pesto 85g bag watercress 100g soft goat's cheese handful black olives
Slice bread in half so you have two round or long bases. Drain the peppers, reserving the oil. Spread 1 tbsp of the pesto over the cut side of each base. Scatter over the peppers and watercress and crumble over the goat’s cheese. Mix the remaining tablespoon of pesto with a tablespoon of oil from the peppers and drizzle it over the pizzas. Scatter the olives over. Cut each pizza into wedges or slices and serve.
One of the best meals I ever had used goat cheese. It was goat cheese ravioli at Mama Melrosa's. If it were me, that is probably what I would do with it. Sorry I don't have a recipe for it. Believe me I am sorry I don't have that recipe. If you like this suggestion, you can probably find a good recipe with google.
Heading to sister's great place in WV mountains the first week of August. Always lots of food/drink involved. We're already talking what we'll be cooking and I'll get a list of stuff to bring along. She has a log of goat cheese that has been lingering in fridge, and has put me on a mission to come up with something to do with it. Some sorta dip for chips or spread for crackers? Looking for a killer recipe and will want to have all ingredients ready to plop in cooler as I head out on the 350+ mile roadtrip. Any suggestions?
