Have A Craving For Lasagna?
Instead of using noodles, use eggplant slices. You can par boil them for a minute remove and start to layer. Ricotta cheese is low fat, has omega 3's for your brain and heart, calcium and protein. Add green bell pepper, chopped onion, and olives as you layer with some ricotta, parm, and tomato sauce. Yummy!
Slice 1 medium eggplant into cubes, slice fresh tomatoes thinly, slice 1 onion thinly
2 tsp of pepper, a sprinkle of oregano, thyme and sage
1/4 cup of parm cheese and 6 eggs well beaten
1 pt of oysters (optional)
8 ounces of ground turkey
2 Garlic Buds, minced
Take eggplant cut into cubes...Simmer eggplant, onions, tomatoes garlic, a touch of salt and other hers in a small amount of water..do not overcook. Saute Oysters if using, in a small amt of butter until the edges curl. Add the parm cheese, ground turkey, eggs and oysters to the eggplane mixture and pour into a casserole. Microwave about 35 minutes or until eggplant is soft or until set.
