Cook in crock pot with seasonings (salt,pepper,chopped onion,celery etc) add 1 cup water. after an hour add a Tbls.of corn startch dissolved in 1/4 C. water. Let it cook and make its own gravy. When its done slice and serve on a slice of bread with mashed potatoes and pour gravy or it all. Its a Hot Beef Sandwich :) OK so its a bunch of carbs and an unhealthy cut of meat....just don`t eat it every day! :)
Rinse the roast, pat dry...pour 1/2 can beef broth over roast and add salt if desired and pepper. Season generously with rosemary and cumin and a couple of bay leaves. Put red potatoes on bottom and roast on top.Add slices of celery, whole mushrooms, Green Beans cut on an angle, Onion ( no Potatoes, if your watching carbs ) Cook 4 hours on high .Cover and cook on low for 8 to 10 hours in the crock pot
Red potatoes have less starch in them than white potatoes.

Bake the roast until done and fork tender, pull/shred meat using forks, add a chopped onion and your favorite barbque sauce, mix together, place back in oven or slow cooker on high until hot ( if meat appears dry, add a small amount of water) -serve on toasted whole grain buns or sub buns with side of your choice. my family prefers coleslaw.
I have an amazing recipe for you!!! It's called Italian Pepper Steak! You cut up the chuck roast into cubes & throw it in the crock pot. Then chop up 4 peppers (I use green, red, yellow, whatever it doesn't matter), 3 onions (not chopped but cut into slicces & then cut once in half, 1 Can of diced tomatoes & 1 can of tomato sauce (I also use 1/2 jar of prepared sauce such as Tutturoso flavored with meat) & 6 garlic cloves (chopped). Add salt & pepper to taste & mix all together in the crock pot & let it cook for about 3 hours (high) or 6 - 7 hours on low. IT'S FANTASTIC! I make it at least once every two weeks because my husband loves it. I serve it with brown rice or couscous.
Whole Chuck Roast 3-5 pounds 1 can 20 oz San Marzano Tomatoes or what ever you have on hand 8 cloves garlic smashed 1 large sliced onion 4 bay leaves 2 tsp basil or 6 fresh leaves 1 tsp oregano 1 tsp red pepper flakes 1 tbs black pepper Salt to taste 1 jar sweet banana peppers
Place roast in crock pot. Dump everything else in. If roast is frozen about 8 to 10 hours. Thawed 6 to 8 hours.
You can make sandwiches, serve with noodles or rice, or mashed potatoes. This is not spicy.
I bought 2 chuck roasts the other day because they were bogo free... I already have one in the freezer. I'm making roast with potatoes and carrots tonight with one of them... what can I do with the other one?
someone suggested cutting it up for stew, which I might do and then freeze it already cut up, but I was looking for other ideas... and if it's a slow cooker recipe, that's a bonus!!! :)
