Thank you for the reply. It's the smoke we don't like for sure. Maybe roasted poblano, never met one I didn't like.

All chipotles are is smoked jalapenos, so you could probably sub in regular jalapenos, or spicier type chiles if you want even more heat. You could even try roasted red peppers from a jar, as those will have similar texture to the canned chipotles in adobo. They just won't be as spicy.
My family and I don't like chipotle peppers in adobo sauce so I have to rule out so many great looking recipes. Are there any substitiutions that would give it a nice spice/heat without the smokey flavor? Thank you for the help.
