I've made this before and it's very good. I'd forgotten about it until now. I think I'll make this for supper tonight with some roasted veggies. Thanks for the idea.
½ cup hellmann mayonnaise ¼ cup grated parmesan cheese 4 boneless skinless chicken breasts
Combine mayonnaise and cheese. Spread on chicken. Bake at 425 degrees uncovered for 20 minutes or so, depending on the size of your chicken breasts.

I do a topping for fish that incorporates 2 T mayo, 1/4 C parmesan cheese, 1/4 t garlic salt, 1 T dried rosemary, and 6 cloves of garlic that have been smashed & blended to a paste. You get all the flavor without a whole lot of extra calories (covers 4-6 large sized breasts). Even better when you replace the mayo with a small amount of olive oil.

I make that all the time I just brush the chicken with mayo or spicy brown mustard and bread it with parmesan cheese. I have done thighs and breast both boneless skinless or bone in and sometimes I mix some seasonings in the mayo before I brush it on the chicken like garlic powder, pepper or oregano what ever I'm in the mood for.
Take the chicken breasts and place in a baking dish. Place slices of tomato on the chicken Sprinkle the cheese on top of the tomato Season with Italian Seasonings Drizzle with olive oil Bake until chicken warmed thru and the cheese is melted
