Yes, there was a recipe posted maybe last week or so. Many people said they had substituted carrots. What happened was everything got done before I got the celery root done, so it wasn't used in the sweet potatoes and I couldn't find the recipe that had been posted. So I wondered if I could freeze it or should I try making more sweet potatoes with it? Would it also work with winter squash? Or maybe I am mixing up recipes and it is in the squash soup that was posted earlier this week. That one I remember the orange and orange juice in. The store only had 1/2 gallon orange juice and I can't drink it, but want to try that recipe, too, so my friend will get some orange juice and I will just keep a little.

I used to mix it with the potatoes (when I ate them). It gave the potatoes a fresh taste.

Celery root is delicious mashed! I also like to roast it along with other veggies -- sweet potatoes would be a great pairing. Perfect for this time of year.

I was going to make the sweet potatoes that were the daily recipe a little while back and cooked my celery root, then couldn't find the recipe. Can those be mashed and frozen? I am not too sure what to use it for now.
