Add it to a pot of chili - it doesn't affect the flavor very much and gives the chili a nice creamy consistency.

This time of year, I'm starting to look forward to pumpkin coffee! :-)

Stir a tablespoon or two into a cup of hot milk with some pumpkin pie spices and then add coffee.

I sometimes add some to my oatmeal. I have also used canned pumpkin to make a smoothie with vanilla yogurt and ice.

SUNSHINE6442: Would it work if I used the whole egg instead of just the egg white in the 2 minute pie recipe?

I love pumpkin puree in lentil stew, add cumin, chorizo or bacon.... yummm, and really healthy. (Be sure that it is NOT pumpkin pie filling:-)

It depends, if its pumpkin pie filling then its already seasoned and sweetened for desserts, smoothies and bars. If its just plain unsweetened canned pumpkin you can mix a few tablespoons into sauces like spaghetti sauce or creamy Alfredo type sauces for pasta. Or add to stew or chili.

Swirl a tablespoon or two in your oatmeal...it's really good.

Make black bean soup and add some to the soup for extra flavor.

2-Minute Pumpkin Pie
If you need a little something to satisfy your sweet tooth, whip up this 75-calorie pumpkin pie for one. This simple recipe, pared down to the most basic and common ingredients, only takes 2 minutes to make, but the end result tastes as delicious as traditional, calorie-packed pie.

1/2 c. pumpkin puree
1/4 c. egg whites (from an egg or carton)
Sweetener
Cinnamon or pumpkin pie spice


Mix together all the ingredients. If you prefer a flan-like texture, add more pumpkin; if you prefer a cake-like texture, add more egg whites. Microwave for two minutes. Use a mix of Greek yogurt, hazelnut cream cheese, and pumpkin pie spice for the icing. Top with toasted pecans.
Makes one serving.
