Cabbage Beef Soup

Base of Chicken Stock (or water & enough chicken bouillon to taste)
cooked ground beef
carrots, sliced
head of cabbage, chopped
butter
onions, chopped
garlic

Bring to a boil, then reduce heat to a simmer. Serve when veggies are cooked.

MMMM cabbage...

Saute it up with some butter and onion. The cabbage turns out to be really sweet. Make an asian salad with ramen noodles. Cook it up with potatoes and onions. Make soup. Make sauerkraut. Eat it raw. Grill it. Roast it in the oven.

I find all my cabbage recipes on www.allrecipies.com. They have some really good ones.

I have done this: put an onion in some olive oil, add the shredded cabbage almost at the same time. Let it simmer slowly until the cabbage reduces a little and you can stir it around. Add some soy sauce and some sesame oil to taste. It is yummy, but don't overcook the cabbage.

Fried Cabbage

Cut 1/2 a head of lettuce into long strips, let it sit for 10 minutes.

Heat the frying pot, use 1 1/2 tablespoons of oil .. let it heat ... pit the cabbage into it, fry. Season to taste, I like hot red pepper and salt.

Shred oit up and add it to salads.....

Sweet and sour red cabbage...I make it at Thanksgiving and my guests fight for it...

Red Cabbage
1/2 cup cider vinegar
1/4 cup sugar
1/4 cup packed brown sugar
1 medium head red cabbage, shredded
2 bacon strips, diced
1 medium tart apple, peeled and chopped
1/2 cup chopped onion
1/4 cup water
1/2 teaspoon salt
1/4 teaspoon pepper


In a large bowl, stir the cider vinegar and sugars until sugars are dissolved. Add cabbage; toss to coat. Let stand for 5-10 minutes.

Meanwhile, in a large skillet cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain.

In the drippings, saute apple and onion until tender. Stir in water and cabbage mixture. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes.

Stir in the remaining ingredients. Simmer, uncovered, for 5 minutes or until tender. Sprinkle with reserved bacon just before serving. Yield: 8-10 servings.

Stuffed Cabbage Soup

8 ounces lean ground beef
1 medium onion, chopped
1 teaspoon Worcestershire sauce
1/8 teaspoon black pepper
1 cup uncooked Minute Rice
10 3/4 ounce can of tomato soup
4 cups water
2 cups shredded cabbage
28 ounce can of diced tomatoes (with or without chiles)

Brown meat and onion in a pan; drain. Put into crock pot with rest of ingredients. Cook several hours on low, until cabbage and rice are soft.

Yield: 12 servings
Per serving (1 cup): 90 calories, 1 gram fat, 1 gram fiber, 19 gram carbs

"Lazy Man's Stuffed Cabbage": Crockpot

Servings: 6 (Posted by SueLaw)

Ingredients:

1 pound(s) uncooked lean ground beef (with 7% fat)
3 cup(s) green cabbage
1 medium garlic clove
1 small raw onion, diced
15 oz canned tomato sauce
2 Tbsp olive oil
1 1/2 cup(s) cooked white rice


Instructions:

1. Pour olive oil in pan. Saute onions and garlic.
2. Add beef and break up during cooking. Drain fat.
3. Add to crock pot.
4. Chop cabbage in small pieces. Add cooked rice and tomato sauce.
5. Cook on low 4-5 hours.

Hungarian-Style Cabbage Rolls

A crock pot Hungarian cabbage recipe with ground beef, ground pork, and tomato juice

Ingredients:
1 large head of cabbage
Boiling water to cover the cored head of cabbage
1/2 pound ground pork
1 pound lean ground beef
1/4 cup or 1 small chopped onion
1 cup rice
1 egg, beaten
1 tablespoon salt
1/2 teaspoon pepper
1/4 teaspoon Tabasco sauce, green
1 tablespoon paprika
2 cups sauerkraut, rinsed and drained
2 cups tomato juice
1 cup water
1 cup (1/2 pint) sour cream

Preparation:

Slow crock pot method
Remove core cabbage and place in a large bowl. Pour boiling water over to cover. Let stand for about 5 minutes, or until the cabbage has wilted. Drain and carefully remove the leaves leaving them whole. Trim off the heavy stem and flatten leaves somewhat. Combine ground meats, chopped onion, rice, egg, salt, pepper, and paprika. Put about 2 tablespoons of this meat and rice mixture on each cabbage leaf; fold sides in like an envelope and roll up. Secure rolls with toothpicks if desired. Place rolls seam side down in crock pot. Spread the sauerkraut over the rolls and add tomato juice and water. Cook on low, covered, for 6 to 8 hours.

Remove cabbage rolls to a warm platter. Blend 1/2 cup of the broth with the sour cream and pour over cabbage rolls.

The original recipe called for 3/4 pound ground beef and 3/4 ground pork.

Cabbage Roll Casserole

Crissy's Note: Stuffed cabbage w/out the fuss. The flavor is great and the serving size large.

LDHAWKE98 Review: I loved the recipe and the leftovers are great!

1 1/2 pounds lean ground round
2 medium onions -- chopped
5 cloves garlic -- minced
1 tsp salt
1/4 teaspoon pepper
8 ounces tomato sauce
1 cup water
1/2 cup rice
6 cups shredded cabbage

Brown ground beef just until it loses its pink color. Drain if necessary.

Add onions, garlic, Salt and pepper, tomato sauce and water. Bring to simmer, add rice and cook for about 10 minutes until rice is partially cooked. Remove from heat.

Spread half of cabbage in greased (Pam) deep dish. Cover with half of meat mixture. Repeat layers. Do not stir, cover with foil tightly and bake at 350degrees for 1 1/2 hours or until cabbage is tender.

Serves: 6

Per Serving: 265 Calories; 10g Fat (31.2% calories from fat); 24g Protein; 23g Carbohydrate; 3g Dietary Fiber; 61mg Cholesterol; 671mg Sodium.

Cabbage and Potato Casserole

2 teaspoons olive oil
2 medium onions -- chopped
1 small head cabbage -- shredded
2 medium green apples -- thinly sliced
1 1/2 teaspoons white wine vinegar
1 1/2 tablespoons sugar 1/2 teaspoon salt
1/4 teaspoon pepper
2 cups low sodium vegetable broth
1/2 cups leftover mashed potatoes

In large skillet, over medium heat, heat the olive oil and saute onion til golden brown.

In crockpot, make alternate layers of cabbage and apple. Add the onion, vinegar, sugar, salt and pepper.

Mix the broth into the mashed potatoes to make a thin sauce and pour it over the cabbage mixture. Cover and cook on High setting for 3-4 hours.

Serves 6.


149 Calories; 4g Fat; 7g Protein; 24g Carbohydrate; 5g Dietary Fiber

Boiled Cabbage and Sausage

1 head of Cabbage, quartered
1 lb smoked sausage, cut into 2 pieces
4 carrots, cut into 2 pieces
4 onions, quartered
8 new red potatoes

Place all ingredients in a large pot, fill with water just to cover. Boil until potatoes are fork tender. Drain and serve.

Cabbage rolls! .. I've never made them before so I'm not sure of the recipe. Basically ground meat wrapped in the leaves of the cabbage and baked. (Also what kind of cabbage is it? If it's pickled, it's a good idea to let it soak in water for... I think it's for the night or for a day.
