One thing my mom used to make that I always loved was "potted beef". Basically she'd cut up a beef roast into bite sized pieces and put it into a big pot with chopped onions, garlic, a package of dry onion soup mix and enough water to cover. Bring it to a boil and then let simmer for a couple hours so the beef gets nice and tender and the broth has a nice beefy flavor. Then I think she just added a can or two of cream of mushroom soup, heated it through and we had over noodles. It was an easy meal to make for a large family that would still have lots of leftovers for lunches!
